Smoked Sausage Caprese Sliders
A sloppy slider with smoked sausage, marinated tomatoes and fresh mozzarella on a Keto dinner roll is deliciously different for either lunch or dinner.

- 1 smoked sausage cut in rounds
- 1 fresh mozzarella log sliced
- 1 package Keto dinner rolls or slider buns
- Roma tomatoes sliced
- 1 red onion sliced thin
- (Optional) 1/2 tsp. Italian seasoning
- 1/4 cup balsamic vinegar
- 1 Tbsp. extra virgin olive oil
- 1 jar prepared pesto
- Balsamic glaze for drizzling
- 1/4 tsp. salt
Wrap the dinner rolls in foil and warm in the oven.
Place the tomatoes and red onion in a bowl. Season with salt and pepper.
Drizzle with balsamic vinegar and toss gently.
Heat olive oil in a skillet.
Add the smoked sausage rounds and cook until browned. Remove to a plate.
Remove warmed rolls from the oven and split in half through the middle.
Spread both halves of the rolls with the basil pesto.
Place a slice of mozzarella on one-half of the rolls.
Arrange the smoked sausage rounds on one-half of the rolls.
Top with the balsamic tomatoes.
Drizzle with balsamic glaze.
Place the tops on the sliders and wrap in aluminum foil.
Return the foil package back to the oven to heat through before serving.
