Sole Almondine

Use sole, flounder or tilapia for this simplistic fish dinner. Very few ingredients are required for this quick and easy meal.

Equipment

  • 1 knife
  • 1 measuring cup
  • Measuring spoons
  • 1 bowl or baking dish for soaking the fish
  • 1 colander
  • Paper towels
  • 1 skillet
  • 1 Large spoon
  • 1 flat spatula

Ingredients
  

  • 4-6 sole filets, flounder or tilapia
  • 4-6 Tbsp. butter
  • Salt and pepper
  • 1 cup slivered almonds toasted
  • Fresh herbs chopped
  • 2 lemons one juiced and one cut in wedges

Instructions
 

  • Soak the fish in milk for at least 30 minutes to remove any fishy odor or flavor.
  • Drain and rinse well. Set aside.
  • Pat the fish dry with a paper towel and sprinkle with salt and pepper.
  • In a skillet, melt 2 tablespoons of butter.
  • Add the slivered almonds until they are golden brown.
  • Remove from the skillet and place in a bowl with whatever butter is left in the pan.
  • Melt 2 more tablespoons of butter in the microwave.
  • Stir in the lemon juice and pour the mixture into the bowl with the almonds.
  • Wipe out the skillet with a paper towel.
  • Pour the melted butter into the pan.
  • Fry the fish in the butter on each side until it is done.
  • Pour the almond mixture over the fish and heat through.
  • Top with the herb mixture.
  • Serve hot with extra wedges of lemon.
