I love making fish because it is light, delicious, and quick. The buttery sauce and the crunchy almonds on top are truly uncomplicated. Sole is a very thin fish filet that derives its name because it is shaped like the sole of a shoe. If the sole is unavailable in your grocery store, tilapia, flounder, or trout are good substitutions.
Instructions
4-6 filets sole, flounder or tilapia
4-6 Tbsp. butter
Salt and pepper
1 cup slivered almonds, toasted
Fresh herbs, chopped
1 lemon, juiced
Ingredients
Soak the fish in milk for at least 30 minutes to remove any fishy odor or flavor. Drain and rinse well. Set aside. Pat the fish dry with a paper towel and sprinkle with salt and pepper.
In a skillet, melt 2 tablespoons of butter.
Add the slivered almonds until they are golden brown. Remove from the skillet and place in a bowl with whatever butter is left in the pan.
Melt 2 more tablespoons of butter in the microwave. Stir in the lemon juice and pour the mixture into the bowl with the almonds.
Wipe out the skillet with a paper towel. Pour the melted butter in the pan. Fry the fish in the butter on each side until it is done.
Pour the almond mixture over the fish and heat through.
Top with the herb mixture.
Serve hot with extra wedges of lemon.
