Spicy turkey Lettuce Wraps

- 2 limes juiced
- 1/8 tsp. cayenne
- 1/8 tsp. pepper
- 1 Tbsp. brown sugar Swerve
- 2 Tbsp. soy sauce
- Sriracha sauce
- 1-1/2 lb. ground turkey
- 1 Tbsp. sesame oil
- 1/2 cup celery chopped
- 1/4 cup onion chopped
- 1/4 cup green onion garnish
- 1-1/2 cups cucumber diced
- 1/4 cup cilantro garnish
- 3 garlic cloves minced
- 1 onion chopped
- 1 red pepper chopped
- 1/4 cup carrot shredded
- 1 can sliced water chestnuts
In a small bowl, combine lime juice, cayenne, black pepper, brown sugar Swerve, 1 tablespoon of soy sauce and Sriracha sauce. Set aside.
Cook the ground turkey and celery in sesame oil for 5 minutes until the turkey is cooked.
Stir in the remaining soy sauce, ginger paste, onion, garlic and red pepper.
Cook until the onions and peppers have softened a little about 3 minutes.
Add the carrots and water chestnuts.
Cook and stir until the liquid is absorbed.
To serve the lettuce wraps, peel the outer layer of a head of iceberg lettuce one layer at a time. The lettuce cups will get smaller as you peel away the lettuce leaves.
Fill the lettuce cups with the hot turkey mixture and top them with the remaining ingredients to garnish.
