This Thai Chicken Pizza will be a hit if you like sweet with savory foods. The peanut butter sauce with a hint of honey really shines through. Using a low-carb tortilla, this pizza is fun to make with the family.

  • 1 large baking sheet

Ingredients
  

  • 4 low-carb tortillas
  • 1/4 cup creamy peanut butter
  • 2 Tbsp. soy sauce
  • 4-1/2 tsp. Swerve brown sugar or honey
  • 3-1/4 tsp. rice wine vinegar
  • 2 cups raw butternut squash or carrots, shredded
  • 1/2 cup cilantro, chopped
  • 1/2 cup shredded mozzarella
  • 2 cups or more shredded cooked chicken

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a small bowl, mix the peanut butter, soy sauce, brown sugar Swerve and rice wine vinegar.
  • Place the tortillas on a baking sheet. Bake for 10 minutes until stiff.
  • Spread the peanut butter mixture over the tortillas
  • Top with shredded chicken, butternut squash or carrots and mozzarella cheese.
  • Pop back in the oven to melt the cheese and warm the chicken.
  • Top with chopped cilantro before serving and cut into wedges.
