Low Carb Thai Chicken Pizza

Ingredients

4 low-carb tortillas

1/4 cup creamy peanut butter

2 Tbsp. soy sauce

4-1/2 tsp. Swerve brown sugar or honey

3-1/4 tsp. rice wine vinegar

2 cups raw butternut squash or carrots, shredded

1/2 cup cilantro, chopped

1/2 cup shredded mozzarella

2 cups or more shredded cooked chicken

Instructions

Preheat the oven to 350 degrees. In a small bowl, mix the peanut butter, soy sauce, brown sugar Swerve and rice wine vinegar.

Place the tortillas on a baking sheet. Bake for 10 minutes until stiff.

Spread the peanut butter mixture over the tortillas

Top with shredded chicken, butternut squash or carrots and mozzarella cheese. Pop back in the oven to melt the cheese and warm the chicken.

Top with chopped cilantro before serving.

Cut into wedges before serving. Yum, yum and yum!
