The Best White Queso Dip Ever!

- 1/2 onion small dice
- 1 jalapeno minced or 1 can chopped green chiles or both
- 1 tsp. garlic
- 2 Tbsp. olive oil
- 1 pound white American cheese cubed
- 1/4 cup milk at least add more if you want the dip with a thin consistency
- 1 can Rotel tomatoes drained
- 1 tsp. chili powder
- 1 tsp. cumin
- 1/8 tsp. crushed red pepper flakes
- 1/4 tsp. garlic salt
- Pinch of cayenne pepper
- Garnishes: Pico de gallo chopped cilantro
Sauté the onion, jalapeno and garlic in some olive oil.
Place the cubed white American cheese in a microwave-safe bowl.
Add the tomatoes, sautéed vegetables and chopped green chiles or jalapenos (or both).
Add the spices: chili powder, cumin, crushed red pepper flakes, garlic salt and cayenne.
Heat until the cheese has melted and becomes smooth. Taste to adjust the seasonings.
Serve with veggies, Keto crackers or your favorite tortilla chips.
