The white cheese in this queso recipe is not what sets this dip apart from one made with yellow cheese. The difference is all the other stuff that goes in it. Want to test my theory? Please…be my guest!
Ingredients
1/2 onion, small dice
1 jalapeno, minced or 1 can chopped green chiles or both
1 tsp. garlic
2 Tbsp. olive oil
1 pound white American cheese, cubed
1/4 cup milk at least, add more if you want the dip more on the thin side
1 can rotel tomatoes, drained
1 tsp. chili powder
1 tsp. cumin
1/8 tsp. crushed red pepper flakes
1/4 tsp. garlic salt
Pinch of cayenne pepper
Garnishes: Pico de gallo, chopped cilantro
Instructions
Sauté the onion, jalapeno and garlic in some olive oil.
Place the cubed white American cheese in a microwave safe bowl.
Add the tomatoes, sautéed vegetables and copped green chiles or jalapenos (or both).
Add the spices: chili powder, cumin, crushed red pepper flakes, garlic salt and cayenne.
Heat until the cheese has melted and becomes smooth. Taste to adjust the seasonings. You won’t mind doing this at all; in fact, take a couple of tastes to make really, really, really sure.
Serve with veggies, Keto crackers or your favorite tortilla chips.
