Tilapia Parmesan

  • Measuring spoons
  • 1 knife
  • 1 medium bowl or casserole dish
  • 1 colander
  • 1 medium saucepan
  • 2 shallow dishes or pie plates
  • 1 medium spoon
  • 1 skillet
  • 1 baking sheet

Ingredients
  

  • 2 lbs. tilapia
  • 2 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/2 cup Parmesan cheese
  • 1/4 tsp. Old Bay seafood seasoning
  • 1/4 tsp. dried basil
  • Black pepper to taste
  • 2 Tbsp. mayonnaise
  • 1 dash hot sauce
  • 4 Tbsp. butter room temperature (use more if needed)
  • 4 Tbsp. extra virgin olive oil (use more if needed
  • 3 Tbsp. green onion chopped
  • 1 cup marinara sauce use more if needed
  • 1 8-oz bag mozzarella cheese shredded

Instructions
 

  • Soak the tilapia filets in milk for at least 30 minutes. The milk neutralizes any fishy odor or smell.
  • Drain and rinse well.
  • Transfer the fish to a casserole dish.
  • Drizzle the lemon juice over the filets and sprinkle with salt.
  • In a saucepan, heat the marinara sauce.
  • In a shallow dish or pie plate, combine the Parmesan, basil, seafood seasoning and pepper.
  • Mix well.
  • In a separate dish or pie plate, combine the mayonnaise and hot sauce.
  • Melt the butter in a skillet with some olive oil.
  • Meanwhile, coat the filets in the mayonnaise mixture, then dredge it in the Parmesan mixture.
  • Fry the filets in the oil until crispy.
  • Remove to a baking sheet and top with marinara sauce and cheese.
  • Place under the broiler in the oven until cheese is melted about 3 minutes. Keep an eye on them so that the cheese does not burn.
  • Serve with green onions as a garnish.
