Tilapia Parmesan

When I have fish on the menu, I know dinner will be ready in minutes. This Tilapia Parmesan recipe is a crowd-pleaser for everyone. Be sure to make plenty because everyone will want a second helping.

Ingredients

2 lbs. tilapia

2 Tbsp. lemon juice

1 tsp. salt

1/2 cup Parmesan cheese

1/4 tsp. Old Bay seafood seasoning

1/4 tsp. dried basil

Black pepper to taste

2 Tbsp. mayonnaise

1 dash hot sauce

4 Tbsp. butter, room temperature (use more if needed)

4 Tbsp. extra virgin olive oil (use more if needed

3 Tbsp. green onion, chopped

1 cup marinara sauce (use more if needed)

1 8-oz bag mozzarella cheese, shredded

Instructions

Soak the tilapia filets in milk for at least 30 minutes. The milk neutralizes any fishy odor or smell. Drain and rinse well.

Transfer the fish to a casserole dish. Drizzle the lemon juice over the filets and sprinkle with salt.

In a saucepan, heat the marinara sauce.

In a shallow dish or pie plate, combine the Parmesan, basil, seafood seasoning and pepper. Mix well. In a separate dish or pie plate, combine the mayonnaise and hot sauce. I use Blue Plate mayonnaise because it is a really good mayonnaise and Tabasco because it is the best hot sauce. Coincidentally, both are Louisiana products, my home state. Stir until combined.

Melt the butter in a skillet with some olive oil. While that is heating up, coat the filets in the mayonnaise mixture, then dredge it in the Parmesan mixture.

Fry the filets in the oil until crispy. Remove to a baking sheet.

Top with marinara sauce and cheese. Place under the broiler in the oven until cheese is melted about 3 minutes. Keep an eye on them so that the cheese does not burn.

Serve with green onions as a garnish. I find any kind of Parmesan dish to be rich and filling. One filet per person is always enough for me. This is good!
