Turkey Meatloaf

The addition of chopped mushrooms adds a beefy flavor to this Turkey Meatloaf so that you cannot tell that it is turkey. The topping adds a little bit of sweetness for a delicious meal

  • 1 9x13 baking pan
  • 1 Small bowl

Ingredients
  

  • 2 lbs. ground turkey
  • 8 oz. package fresh mushrooms, finely chopped
  • 1 cup Keto breadcrumbs
  • 1 onion chopped fine
  • 1/2 cup milk
  • 2 eggs
  • 4 Tbsp. ketchup
  • 2 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1 tsp. salt1.
  • 2 tsp. Italian seasoning
  • 1 cup ketchup for the topping
  • 3 Tbsp. Swerve brown sugar
  • 1 Tbsp. Worcestershire sauce

Instructions
 

  • In a large bowl, combine the first 11 ingredients together and mix well.
  • Place the meat mixture in a loaf pan and chill for an hour.
  • Remove from the refrigerator and turn out the meatloaf intoa 9x13 pan. Bake in the oven at 350 degrees for 30 minutes.
  • Meanwhile, prepare the ketchup topping in a small bowl.
  • Remove the meatloaf from the oven and top it with the ketchup mixture.
  • Remove the meatloaf from the oven and top it with the ketchup mixture. Bake for an additional 30 minutes. Allow standing for 10 minutes before slicing.
