An alternative to a meatloaf made with beef, this Turkey Meatloaf is just as flavorful. Turkey is considered healthier than beef because it is lower in fat, but you can’t taste the difference in this recipe. The fresh ingredients added to the meatloaf create a moist center that is easy to put together. Some people do not like the taste of ground turkey, but the addition of the chopped fresh mushrooms adds a beefy flavor.
Ingredients
2 lbs ground turkey
8 oz. package fresh mushrooms, finely chopped
1 cup Keto breadcrumbs
1 onion, chopped fine
1/2 cup milk
2 eggs
4 Tbsp. ketchup
2 tsp. garlic powder
1/2 tsp. pepper
1 tsp. salt
1.2 tsp Italian seasoning
1 cup ketchup for the topping
1 Tbsp. Swerve brown sugar
1 Tbsp. Worcestershire sauce
Instructions
In a large bowl, combine the first 11 ingredients together and mix well.
Place the meat mixture in a loaf pan and chill for an hour.
Remove from the refrigerator and turn out the meatloaf into a 9×13 pan. Bake in the oven at 350 degrees for 30 minutes.
Meanwhile, prepare the ketchup topping in a small bowl by combining 1 cup of ketchup, Swerve brown sugar and Worcestershire sauce. Stir until well combined.
Remove the meatloaf from the oven and top it with the ketchup mixture. Bake for an additional 30 minutes. Allow standing for 10 minutes before slicing.
