Turkey Tortilla Soup

- 4 Tbsp. extra virgin olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 poblano pepper chopped
- 1 15- oz. can crushed tomatoes
- 1 cup water
- 2 Tbsp. sauce from a can of chipotle in adobo
- 2 tsp. cumin
- 1/2 tsp. salt
- 1 tsp. Mexican oregano
- 1 tsp. chili powder
- 2 cups shredded or cooked ground turkey
- 1 can black beans rinsed and drained
- 1 cup corn optional
- 5 cups chicken broth
- 1 avocado cubed
- 1 cup Monterrey Jack cheese
- 1/4 cup cilantro chopped
- 1 lime cut in wedges
- Tortilla chips
- Green onion sliced
- 1 jalapeno sliced
Heat the oil in a soup pot.
Saute the onion, garlic, and poblano peppers.
Add the crushed tomatoes and water. Stir.
Add the chipotle in adobo, cumin, salt, chili powder and oregano. Stir.
Add the turkey, black beans and corn.
Cook and stir until hot.
Serve topped with avocado, cilantro, tortilla chips. green onion, or jalapeno slices, or you a combination of all the toppings you enjoy.
