Let’s talk turkey! Turkey is significantly healthier than beef as it is rich in protein and minerals, such as magnesium and niacin. It is a good source of the cancer-fighting mineral, selenium. For all your Keto friends, turkey does not spike blood sugar and promotes “good” HDL cholesterol. As we all know, turkey contains the amino acid, tryptophan, which helps to regulate sleep, mood, pain and appetite. Turkey Tortilla Soup is the same tortilla soup with the same flavor; the only difference is it is made with ground turkey.
Ingredients
4 Tbsp. extra virgin olive oil
1 onion, chopped
2 garlic cloves, minced
1 poblano pepper, chopped
1 15-oz. can crushed tomatoes
1 cup water
5 cups chicken broth
2 Tbsp. sauce from a can of chipotle in adobo
2 tsp. cumin
1/2 tsp. salt
1 tsp. Mexican oregano
1 tsp. chili powder
2 cups shredded or cooked ground turkey
1 avocado, cubed
1 cup Monterrey Jack cheese
1/4 cup cilantro, chopped1 lime, cut in wedges
1 can black beans, rinsed and drained
1 cup corn (optional)
Tortilla chips
Green onion, sliced
1 jalapeno, sliced
Instructions
Heat the oil in a soup pot. Saute the onion, garlic, and poblano peppers.
Add the crushed tomatoes, water and chicken broth. Stir.
Add the chipotle in adobo, cumin, salt, chili powder, and oregano. Stir.
Add the turkey, black beans and corn. Cook and stir until hot.
Serve the soup topped with avocado, cilantro, tortilla chips. green onion, or jalapeno slices, or you a combination of all the toppings you enjoy.
