Vegetable Cauliflower Rice

Liven up leftover vegetables by turning them into something new and tasty. This Vegetable Cauliflower Rice is a no-brainer for making something out of nothing.

Equipment

  • 1 knife
  • Microwave
  • 1 medium spoon

Ingredients
  

  • 1-2 bags frozen cauliflower rice. I like the texture of the Costco brand
  • Any leftover vegetables on hand fresh, frozen or cooked
  • 2 Tbsp. butter

Instructions
 

  • If using fresh vegetables, they must be cooked first. Look in your refrigerator for any vegetables you need to use up.
  • Chop and saute the found vegetables in butter. Cook until desired tenderness.
  • Cook the cauliflower rice in the microwave according to package directions. Usually, it is 5 minutes.
  • If using partial bags of frozen or leftover cooked vegetables from the freezer, place the bag(s) in the microwave with the cauliflower rice.
  • Once the cauliflower rice is done, drain and place in a bowl.
  • Toss the vegetables with the cauliflower rice.
  • If you have any flavored butter, such as curry butter or herb butter, you can use that up for additional flavor. The best part is that it is different every time you make it.
