Cauliflower rice is amazingly versatile! Five minutes in the microwave and this side dish is ready to eat. It is good with only butter, salt and pepper, but why have that when you can combine it with flavorful seasonings and a variety of vegetables? This dish is a good way to use leftover vegetables from last night’s dinner or start with fresh vegetables. On its own, Vegetable Cauliflower Rice is perfect for a healthy, light lunch or a side dish at dinner time.
Ingredients
1-2 bags frozen cauliflower rice. (I like the texture of the Costco brand)
Any leftover vegetables on hand, fresh, frozen or cooked
2 Tbsp. butter
Instructions
If using fresh vegetables, they must be cooked first. Look in your refrigerator for any vegetables you need to use up. On this day, I found some squash, zucchini, green pepper, yellow pepper and green beans.
Next, chop and saute the found vegetables in the butter. Cook until desired tenderness.
Cook the cauliflower rice in the microwave according to package directions. Usually, it is 5 minutes.
If you use partial bags of frozen or leftover cooked vegetables in the freezer, simultaneously place the bag(s) in the microwave with the cauliflower rice.
Once the cauliflower rice is done, drain and place in a bowl; then, toss the vegetables with the cauliflower rice.
This is a great way to use leftover vegetables by gathering the fragments in the fridge that do not have a clear purpose. If you have any flavored butter, such as curry butter or herb butter, you can use that up for added flavor. The best part is that it is different every time you make it.
