Vietnamese Chicken Salad
With all the components of this recipe prepared and ready to go, this easy salad comes together in minutes for a quick lunch. This delicious salad is tangy with a bit of spice.

1 large mixing bowl

- 2 Tbsp. soy sauce
- 2 tsp. fresh lime juice
- Pinch of sweetener or sugar
- Pinch of crushed red pepper
- 2 cups shredded rotisserie chicken (or use whatever leftover chicken you might have)
- 1 bag coleslaw mix
- 1 red bell pepper, sliced thin
- 1 Tbsp. mint, chopped
- 1 Tbsp. cilantro, stems removed and chopped
In a bowl, whisk together soy sauce, lime juice, sugar andcrushed red pepper. Set aside.
In a separate large salad bowl, combine the chicken,coleslaw mix, red bell pepper and mint. Toss well.
Pour the dressing over the salad mixture and toss untilcoated.
Serve with a garnish of chopped cilantro.
