Vietnamese Chicken Salad

With all the components of this recipe prepared and ready to go, this easy salad comes together in minutes for a quick lunch. This delicious salad is tangy with a bit of spice.

Equipment

  • Measuring spoons
  • 1 measuring cup
  • 1 knife
  • 1 Small bowl
  • 1 large mixing bowl
  • tongs

Ingredients
  

  • 2 Tbsp. soy sauce
  • 2 tsp. fresh lime juice
  • Pinch of sweetener or sugar
  • Pinch of crushed red pepper
  • 2 cups shredded rotisserie chicken (or use whatever leftover chicken you might have)
  • 1 bag coleslaw mix
  • 1 red bell pepper, sliced thin
  • 1 Tbsp. mint, chopped
  • 1 Tbsp. cilantro, stems removed and chopped

Instructions
 

  • In a bowl, whisk together soy sauce, lime juice, sugar andcrushed red pepper. Set aside.
  • In a separate large salad bowl, combine the chicken,coleslaw mix, red bell pepper and mint. Toss well.
  • Pour the dressing over the salad mixture and toss untilcoated.
  • Serve with a garnish of chopped cilantro.
