A twist on a regular chicken salad, this version adds a few different ingredients to give it an Asian flare. The fresh ingredients liven up the same old, ordinary chicken salad with fresh flavors. The crunchy cabbage mix and chicken pair well with the spicy dressing with Asian flavors.
Ingredients
2 Tbsp. soy sauce
2 tsp. fresh lime juice
Pinch of sugar
Pinch of crushed red pepper
2 cups shredded rotisserie chicken (or use whatever leftover chicken you might have)
1 bag coleslaw mix
1 red bell pepper, sliced thin
1 Tbsp. mint, chopped
1 Tbsp. cilantro, stems removed, chopped
Instructions
In a bowl, whisk together soy sauce, lime juice, sugar and crushed red pepper. Set aside.
In a separate large salad bowl, combine the chicken, coleslaw mix, red bell pepper and mint. Toss well.
Pour the dressing over the salad mixture and toss until coated. Serve with a garnish of chopped cilantro.
