Watermelon Sangria
Refreshing watermelon juice, coupled with fruity flavors and the sparkle of Prosecco, is a cocktail to plan for as Spring approaches.

- 1 bottle watermelon juice (I used Tropicana Watermelon Breeze)
- 1 bottle white wine or rose
- 3/4 cup Cointreau
- 1/2 cup vodka
- 1/2 cup lime juice, freshly squeezed
- 1 tsp. vanilla extract
- 4 Tbsp. Swerve granular or to taste
- 1 bottle Prosecco
- 1 blood orange, sliced
- 1 lime, sliced
- 1 lemon, sliced
- 1 cup blueberries
- Garnish: 1 watermelon slice per blass
In a large pitcher, combine the watermelon juice, wine, Cointreau, vodka, lime juice, and vanilla. Stir.
Add the Swerve and adjust for sweetness. Stir until the sweetener is dissolved.
Add the fruit and chill for at least 3 hours.
Just before serving, add the Prosecco. If you are serving a crowd, you can add the whole bottle to the pitcher, but if you are only serving a few, top off individual glasses with the Prosecco.
Garnish each glass with a slice of watermelon.
