Watermelon Sangria

Refreshing watermelon juice, coupled with fruity flavors and the sparkle of Prosecco, is a cocktail to plan for as Spring approaches.

Ingredients
  

  • 1 bottle watermelon juice (I used Tropicana Watermelon Breeze)
  • 1 bottle white wine or rose
  • 3/4 cup Cointreau
  • 1/2 cup vodka
  • 1/2 cup lime juice, freshly squeezed
  • 1 tsp. vanilla extract
  • 4 Tbsp. Swerve granular or to taste
  • 1 bottle Prosecco
  • 1 blood orange, sliced
  • 1 lime, sliced
  • 1 lemon, sliced
  • 1 cup blueberries
  • Garnish: 1 watermelon slice per blass

Instructions
 

  • In a large pitcher, combine the watermelon juice, wine, Cointreau, vodka, lime juice, and vanilla. Stir.
  • Add the Swerve and adjust for sweetness. Stir until the sweetener is dissolved.
  • Add the fruit and chill for at least 3 hours.
  • Just before serving, add the Prosecco. If you are serving a crowd, you can add the whole bottle to the pitcher, but if you are only serving a few, top off individual glasses with the Prosecco.
  • Garnish each glass with a slice of watermelon.
