Watermelon Sangria

I can tell I am dreaming of warmer days and the coming of Spring when I can sit on the patio in perfect peace, listening to the sounds of nature. My vision somehow always ends up with a cocktail, such as this Watermelon Sangria. Watermelon juice, found near the cold juices in the grocery store is the star of this pretty cocktail. I love this cocktail because it is fizzy and fresh! I mean, really, who doesn’t like bubbles?

Ingredients

1 bottle watermelon juice

1 bottle white wine or rose

3/4 cup Cointreau

1/2 cup vodka

1/2 cup lime juice, freshly squeezed

1 tsp. vanilla

4 Tbsp. Swerve granular or to taste

1 bottle Prosecco

1 blood orange, slice

1 lime, sliced

1 lemon, sliced

1 cup blueberries

Garnish: 1 watermelon slice per glass

Instructions

In a large pitcher, combine the watermelon juice, wine, Cointreau, vodka, lime juice, and vanilla. Stir.

Add the Swerve and adjust for sweetness. Stir until the sweetener is dissolved.

Add the fruit and chill for at least 3 hours.

Just before serving, add the Prosecco. If you are serving a crowd, you can add the whole bottle to the pitcher, but if you are only serving a few, top off individual glasses with the Prosecco.

Garnish each glass with a slice of watermelon.

  • 1 bottle Prosecco

  • 1 cup blueberries
  • Garnish: 1 watermelon slice per blass
