Zucchini and Squash with Feta and Basil

Zucchini and yellow squash ribbons simmer in a fresh and tasty sauce. Top it with feta cheese and basil for a Mediterranean flare.

  • 1 knife
  • 1 vegetable peeler
  • 1 Grill pan or skillet pan
  • 1 Small bowl

Ingredients
  

  • 2 large Zucchini, sliced thinly lengthwise
  • 1 large Yellow squash, sliced thinly lengthwise
  • 3 Tbsp. Extra virgin olive oil for grilling
  • . Salt and pepper to taste fine
  • 2 Shallots, chopped fine
  • 2 tsp. Garlic, minced
  • 1 6-ounce package Feta cheese, crumbled
  • 1 Lemon, zest and juice
  • 3 Tbsp. Fresh basil, chopped

Instructions
 

  • Cut the ends off the zucchini and yellow squash. Also, cut a small slice off each rounded side of the squash to square it off. Having square sides makes it easier to slice.
  • Cut thin slices from the zucchini and squash. Slice as thin as possible.
  • Heat the oil in a pan.
  • Add the shallots and garlic until the shallots are soft.
  • Add the zucchini and sprinkle with salt and pepper.
  • Cook the zucchini a couple of minutes on medium-low heat.
  • Whisk together the ingredients for the seasoning sauce in a small bowl. Cook for about 5 minutes.
  • Add a squeeze of lemon juice and garnish the top with feta and chopped, fresh basil.just before serving,
