Zucchini and Squash with Feta and Basil
Zucchini and yellow squash ribbons simmer in a fresh and tasty sauce. Top it with feta cheese and basil for a Mediterranean flare.

- 2 large Zucchini, sliced thinly lengthwise
- 1 large Yellow squash, sliced thinly lengthwise
- 3 Tbsp. Extra virgin olive oil for grilling
- . Salt and pepper to taste fine
- 2 Shallots, chopped fine
- 2 tsp. Garlic, minced
- 1 6-ounce package Feta cheese, crumbled
- 1 Lemon, zest and juice
- 3 Tbsp. Fresh basil, chopped
Cut the ends off the zucchini and yellow squash. Also, cut a small slice off each rounded side of the squash to square it off. Having square sides makes it easier to slice.
Cut thin slices from the zucchini and squash. Slice as thin as possible.
Heat the oil in a pan.
Add the shallots and garlic until the shallots are soft.
Add the zucchini and sprinkle with salt and pepper.
Cook the zucchini a couple of minutes on medium-low heat.
Whisk together the ingredients for the seasoning sauce in a small bowl. Cook for about 5 minutes.
Add a squeeze of lemon juice and garnish the top with feta and chopped, fresh basil.just before serving,
