I love that zucchini or yellow squash are available all year round. The best thing about this side dish is that you can eat it hot or cold. This Keto side dish goes with EVERYTHING!!
Ingredients
3 large zucchini, sliced thinly lengthwise
extra virgin olive oil for grilling 3 Tbsp.
Salt and pepper to taste
2 shallots, chopped fine
2 tsp. garlic, minced
1 6-oz. package crumbled feta cheese
1 lemon, zest and juice
3 Tbsp. fresh basil, chopped fine
Instructions
Cut the ends off the zucchini and yellow squash. Also, cut a small slice off each rounded side of the squash to square it off. Having square sides makes it easier to slice.
Cut thin slices from the zucchini. Slice as thin as possible.
Heat the oil in a pan. Add the shallots and garlic until the shallots are soft. Add the zucchini and sprinkle with salt and pepper. Cook for a couple of minutes on medium-low heat.
In a small bowl, whisk together the ingredients for the seasoning sauce. Add the sauce and stir to coat. Cook for about 5 minutes.
Just before serving, add a squeeze of lemon juice and garnish the top with feta and chopped fresh basil.
This side dish is especially delightful and served along with some lamb chops.
