Buttery Yellow Squash with Onions

Tender slices of yellow squash cook with onions in a bit of butter, creating a soft, silky texture and a rich, savory flavor that pairs beautifully with just about anything: grilled meats, roasted chicken, or even a hearty Sunday dinner.

Equipment

  • 1 knife
  • 1 large skillet with lid
  • 1 large spoon or spatula

Ingredients
  

  • 2 large yellow squash sliced
  • 1 large onion halved and sliced
  • 1/2 stick of butter or 1/4 cup extra virgin olive oil
  • 2 tsp. seasoned salt
  • 1 tsp. black pepper
  • (Optional) Grated Parmesan cheese

Instructions
 

  • Heat the butter in a skillet until melted and sizzling.
  • Add the onions and saute for about 3 minutes.
  • Add the sliced squash and stir.
  • Place a lid on the skillet and cook 5 minutes, stirring occasionally.
  • Sprinkle 1 tablespoon seasoned salt and 1/2 teaspoon of black pepper over the top of the squash and onions.
  • Stir.
  • Sprinkle the remaining salt and pepper over the top and stir again.
  • Turn the heat to low and simmer for 10-15 minutes.
  • You can serve it or sprinkle the top with some grated Parmesan cheese.
