Buttery Yellow Squash with Onions in 20 Minutes

Rate this post

Yellow Squash and Onions have always felt like one of those effortless, go-to side dishes that belong on the table. It’s a recipe that’s been passed down through generations in my family, as something both my mother and grandmother made regularly, especially during the warmer months when fresh squash was plentiful. There’s something comforting about how a simple combination of ingredients can create a dish that’s so full of flavor and nostalgia.

The magic really lies in its simplicity. Tender slices of yellow squash cook with onions in a bit of butter, creating a soft, silky texture and a rich, savory flavor that pairs beautifully with just about anything: grilled meats, roasted chicken, or even a hearty Sunday dinner. It’s the kind of side dish that doesn’t try too hard but always delivers.

Another reason this recipe is such a staple is how quickly it comes together. In under 20 minutes, you can have a warm, buttery vegetable dish ready to serve, making it perfect for busy weeknights or last-minute additions to your meal. You can keep it classic with just a touch of salt and pepper, or dress it up with herbs, garlic, or a sprinkle of cheese for a little extra flair.

Whether you grew up eating it or you’re trying it for the first time, Yellow Squash and Onions is one of those timeless dishes that proves simple food is often the most satisfying.

2 large yellow squash, sliced

1 large onion, halved and sliced

1/2 stick of butter or 1/4 cup extra virgin olive oil

2 tsp. seasoned salt

1 tsp. black pepper

(Optional) Grated parmesan cheese

Heat the butter in a skillet until melted and sizzling.

Add the onions and saute for about 3 minutes.

Add the sliced squash and stir. Place a lid on the skillet and cook 5 minutes, stirring occasionally.

Sprinkle 1 tablespoon seasoned salt and 1/2 teaspoon of black pepper over the top of the squash and onions. Stir. Sprinkle the remaining salt and pepper over the top and stir again. Turn the heat to low and simmer for 10-15 minutes.

You can serve it as it is now or sprinkle the top with some grated Parmesan cheese. Either way, it’s so good!
