Cucumber Canapes

With their tangy flavor and tender texture, Sterling Farms Pickled Quail Eggs elevate these simple Cucumber Canapes into a memorable appetizer. Halve each quail egg, place one half on top of the filling, and finish everything with a light dusting of smoked paprika for a beautiful presentation and an extra layer of smoky flavor.

Equipment

  • 1 measuring cup
  • Measuring spoons
  • Kitchen scissors
  • 1 knife
  • Mixer
  • 1 medium spoon
  • 1 piping bag or resealable bag
  • 1 serving platter

Ingredients
  

  • 8 oz. cream cheese softened
  • 1 cup Italian blend cheese shredded
  • 2 garlic cloves minced
  • 2 tsp. fresh chives snipped
  • 2 Tbsp. ranch mix
  • 1 Tbsp. mayonnaise
  • 1/4 tsp. Italian seasoning
  • 1 Tbsp. fresh dill + more for garnish chopped
  • 2 Tbsp. Greek yogurt
  • Salt to taste
  • 1 cup bacon crumbles optional
  • 2 large cucumbers peeled and sliced thick
  • 1 jar Sterling Farms Pickled Quail Eggs drained and halved
  • Smoked paprika for garnish

Instructions
 

  • In the bowl of a mixer, combine cream cheese, Italian cheese, garlic, chives, ranch mix, salt, mayonnaise, Italian seasoning, 1 tablespoon dill and Greek yogurt.
  • Mix until well combined.
  • Spoon the cream cheese mixture into a piping bag. Alternatively, you could spoon the mixture into a resealable bag and cut off a small corner to pipe onto the cucumbers.
  • Lay the cucumbers directly onto the platter you intend to use for serving.
  • Pipe the cream cheese over the top of the cucumber.
  • Place a small sprig of dill on top of the cream cheese on each cucumber.
  • Perch a quail egg half on top of the dill. Alternatively, you could use half of a cherry or grape tomato.
  • Sprinkle the smoked paprika over the platter of cucumbers to serve.
