  • 1/2 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. Tabasco
  • 2 cups Gruyere cheese, shredded

Instructions

  • If you are Keto, you can make your own Keto English muffins in a mug. They are very easy to make and take only minutes. If you are not following a Keto diet, you can use your favorite brand of English muffins for this recipe. You will need 3 English muffins for this recipe.
  • In a large mixing bowl, combine the eggs, milk, cream, salt and pepper. Whisk until well combined.
  • In a skillet, cook the turkey bacon in the olive oil until browned. Set aside.
  • In a small saucepan, combine the butter, lemon juice, Dijon mustard, salt, pepper and hot sauce. Stir until the butter is melted and the sauce is slightly thickened.
  • In a casserole dish sprayed with cooking spray, place the English muffins on the bottom.
  • Place the turkey bacon across the top of the English muffins.
  • Spread the spinach or asparagus over the top of the English muffins. On this day, I used spinach.
  • Pour the egg mixture evenly over the top of the spinach. spread it to the corners with a spatula if needed.
  • Bake for 45 minutes at 250 degrees until the eggs are set in the middle. Check the eggs with a toothpick or skewer for doneness. If it comes out clean, the casserole is cooked.
  • Remove the casserole from the oven and spread the Hollandaise sauce over the top. Spread to the edges with a spoon or spatula.
  • Sprinkle the Gruyere cheese over the top.
  • Place the casserole back in the oven for about 15 minutes or until the cheese is melted.
  • Remove from the oven and cut unto squares. Top with a spring of parsley. YUM!!
