Eggs Benedict Casserole

This casserole contains all the flavors and components of an iconic Eggs Benedict. The best part is that this casserole is made with Keto English Muffins. To get my Keto English Muffin recipe, click here. They are super easy to make in the microwave.

Ingredients

3 Keto English Muffins, sliced in half lengthwise (click here for ingredients)

1 dozen eggs + 3 egg yolks

1-1/2 cups milk

1/2 cup heavy cream

1 tsp. salt

1/2 tsp. pepper

1 Tbsp. extra virgin olive oil

1 8-oz. package turkey bacon or Canadian bacon

1 bag fresh spinach OR 1 lb. asparagus, trimmed

2 Tbsp. butter, melted

2 Tbsp fresh lemon juice

1/2 tsp. Dijon mustard

1/4 tsp. salt

1/4 tsp. pepper

1/2 tsp. Tabasco

2 cups Gruyere cheese, shredded

Instructions

If you are Keto, you can make your own Keto English muffins in a mug. They are very easy to make and take only minutes. If you are not following a Keto diet, you can use your favorite brand of English muffins for this recipe. You will need 3 English muffins for this recipe.

In a large mixing bowl, combine the eggs, milk, cream, salt and pepper. Whisk until well combined.

In a skillet, cook the turkey bacon in the olive oil until browned. Set aside.

In a small saucepan, combine the butter, lemon juice, Dijon mustard, salt, pepper and hot sauce. Stir until the butter is melted and the sauce is slightly thickened.

In a casserole dish sprayed with cooking spray, place the English muffins on the bottom.

Place the turkey bacon across the top of the English muffins.

Spread the spinach or asparagus over the top of the English muffins. On this day, I used spinach.

Pour the egg mixture evenly over the top of the spinach. spread it to the corners with a spatula if needed.

Bake for 45 minutes at 250 degrees until the eggs are set in the middle. Check the eggs with a toothpick or skewer for doneness. If it comes out clean, the casserole is cooked. Remove the casserole from the oven and spread the Hollandaise sauce over the top. Spread to the edges with a spoon or spatula. Sprinkle the Gruyere cheese over the top. Place the casserole back in the oven for about 15 minutes or until the cheese is melted.

Remove from the oven and cut unto squares. Top with a spring of parsley. YUM!!
