Review: Kevin’s Thai Coconut Chicken from Costco

There’s this guy on YouTube, Thomas DeLauer, that I like to watch occasionally. He is a clean Keto guru, and he provides a lot of good information about following a Keto diet. If you are following a Keto diet, you should definitely check out his YouTube channel. Sometimes he broadcasts from a mainstream store where he looks for Keto products. He looks at the ingredients list on the packaging to see if the item is really Keto as advertised on the packaging and reviews each ingredient as acceptably clean or not. One thing I have learned on my Keto journey is that many companies place the word Keto on the front of their packaging, but when you read the ingredients list, it is definitely not Keto. I am now an advocate of reading the ingredients on the package to make sure the packaging is not bogus.

In any event, Mr. DeLauer frequently broadcasts from Costco. I love Costco because they sell quite a few Keto products that are actually quite good. One of the items that Mr. DeLauer recommended as Keto was Kevin’s Thai Coconut Chicken. You can find this item in the upright refrigerated meat/cheese/boxed meal section. In my Costco, it is right across from the rotisserie chicken and next to the meat cases.

I am not as concerned about clean ingredients as I am about taste. If a clean item doesn’t taste good, no one is going to eat it, but I was willing to give it a whirl. Thomas DeLauer approved this item as not only Keto but gluten-free. It is fairly clean without antibiotics. It is also dairy free as the sauce is made using coconut milk.

I purchased the product and followed the directions on the back of the product to prepare it for lunch. This product cooks on the stovetop or the microwave. The chicken comes in packets that must be opened and dispensed into a cooking container for either method of cooking, so it is very easy to prepare.

I served this meal for lunch over cauliflower rice, so I was able to get 2 large servings out of one of the packets. The packaging lists the spice level as mild, which is a safe bet for most people. For my family, we found it necessary to add some sriracha sauce and a little soy sauce to boost the spice level to our tastes. I am surprised to say that Kevin’s Thai Coconut Chicken is actually pretty good! I will buy this again and possibly try some of the other Kevin’s products in this product line.
