Meal Prep for the Week of April 3, 2023

Traditionally, meal prepping is preparing a meal ahead of time and portioning it out into individual containers to eat later in the week. My twist on this idea is basically being my own sous chef by preparing the components of a meal to save time when putting a fresh meal. Some items I will make ahead, but usually, those are items that do not lose their flavor and fresh texture as it chills in the refrigerator.

Once you get into a meal-prepping groove, you will reap the benefits of your efforts. Meal prepping is a game changer for preparing meals throughout the week.

The Menu

Monday – Chorizo Frittata, salad

Tuesday – Went out to eat

Wednesday – Went over to a friend’s for dinner

Thursday – Hamburger Steaks with Onion Gravy, Steamed Lemon Broccolini, Salad

Friday – Fish Filets with Avocado Salsa, TexMex Yellow Squash, Salad

Saturday – Spinach Stuffed Chicken, Spinach and Artichoke Pasta

Sunday – Smoked Pork Roast and Smoked Sticky Chicken, Leftover Spinach and Artichoke Pasta, Leftover TexMex Yellow Squash

Breakfast – Keto Blueberry Scones with Lemon Glaze, Bacon and Egg Breakfast Sandwiches

Lunch – Chicken Caeser Salad Sandwiches

Snacks – Muffaletta deviled Eggs, Keto Lemon Truffles, Shrimp with Lemon Aioli Dip

Thawing

Chicken Breast – Stuffed Chicken Breast

Ground beef – Hamburger Steaks with Onion Gravy

Fish – Quick and Easy Fish with Avocado Salsa

Pork roast – Smoked Pork

2 whole chickens – Smoked Sticky Chicken
