Yeah! It’s my birthday today! It was also my son’s birthday 3 days ago! It’s also my wedding anniversary! That’s a lot of celebrating. HA! I know, I know….why did I get married on my birthday? I would have to say I do not recommend it. Everyone asks me why I did it. Well…it’s because at the time, the florist, church, caterer and reception hall all had that day open. It was like the stars all aligned on that day, so I thought about it really hard and decided to do it because otherwise, we would have had to wait another couple of months for all the vendors to have the same day available. This is our 23rd year, so I guess it was a good day! Although it worked out well for me, I still tell people not to get married on a birthday, though.
I am really glad that my son wasn’t born on my birthday. That would be a triple whammy! He cut it really close within three days. This year, I decided I would make a birthday cake for the two of us, and we would share it. The Birch Bender Company has a keto cake mix that I wanted to try. They have a keto mug cake that is quite good, but now they are introducing a cake mix that comes in a pouch for a larger cake. But wait…..they also have a chocolate and vanilla frosting! Saaaaay whaaaat? Not only that, but I found them both at Walmart!!! Yes….you heard me right…..Walmart!
People….this is a game-changer!! Only 5 net carbs!!! I baked the cake according to the package directions, and it baked up perfectly. I let it cool completely before I turned the cake out on a pretty cake stand.
Then, I iced it using the frosting. Do you see that on the front of the frosting container? ZERO net carbs!!! ZE-RO!
I didn’t want to leave it at that. It needed something festive, so I got out my Lily’s chocolate chips and stuck them to the frosting all the way around the sides. I had some chocolate sprinkles, so I sprinkled those on the top around the edge. The sprinkles are the only thing on this cake that is not keto-friendly, but I wasn’t using that much, so I was not concerned.
Then, I placed some pecan halves around the edge of the sprinkles, finishing with some unsweetened, toasted coconut in the middle.
It turned out beautiful! My son loved it! I loved it, too! Just because you are following a certain diet or have dietary restrictions doesn’t mean that you cannot have something you would otherwise consider a treat or indulgence. This cake was just a single-layer cake with some frosting on it until KAPOW!!! The decorations made it seem a lot more special! To turn a phrase or two, the decorations were the icing on the cake!! See…You can have your cake and eat it, too!
