I hope everyone had a lovely Thanksgiving! I am grateful for my family of subscribers and all those who have supported me on my blogging journey. Thanksgiving kicks off the holidays and this year is going to be a roller coaster ride to the beginning of the next year. Not only are the holidays gearing up to be busy on a normal basis, but throw in a college graduation. My son is graduating from college in mid-December, so it’s going to be a crazy time. I am opting for more easy meals to help me to the finish line. Meal prepping is a must at times like this. My husband has also challenged me to prepare meals based on what I have in the freezer and pantry, and I have accepted his challenge. So far, I have planned out about three months of menus using what I have on hand. Going forward, the only things I will purchase are fresh items and anything I don’t have to make my original recipes. Game on!!
This menu and meal prep are from last week, so it was an easy week as far as meal prep goes. I didn’t have much to do. That’s a good thing, right?
