Fresh green beans complement almost any main dish. Roasted Green Beans with Almonds and Pecans is simple to make with a minimum of ingredients if you want something quick to serve with the main dish. Roasting green beans in the oven gives them a somewhat nutty flavor. What better way to enhance the nutty, fresh flavor of roasted green beans than to add more nuts?
Ingredients
2 lbs. fresh green beans, trimmed
Extra virgin olive oil for drizzling
A good amount of salt and pepper
1/2 cup of sliced or slivered almond
1/2 cup of chopped pecans
Instructions
Preheat the oven to 450 degrees. Spread the trimmed green beans on a sheet pan. Toss generously with olive oil, salt and pepper. Roast in the oven for 15 minutes.
Remove from the oven and sprinkle the sliced almonds generously over the green beans. Toss to combine. Place the beans back in the oven and roast until the almonds are golden, about another 8 minutes.
