Meal Prep for the Week of April 1, 2024

It’s April Fool’s Day! I’ve never been one to enjoy pranks. Don’t get me wrong, I enjoy jokes and such, but April Fool’s pranks tend to be mean-spirited in my opinion. That’s why I am spending my time in my kitchen meal-prepping to avoid all those pranksters. No one wants to pull a prank on someone handling a sharp knife! LOL In all seriousness, meal-prepping is no joke. It’s a lifesaver during the week. At the end of the day (and all the in-between times) Those would-be pranksters still have to eat.

Monday – Enchilada Casserole, refried beans, Spanish rice

Tuesday – Steak, Mashed Cauliflower, Salad

Wednesday – Baked Parmesan Chicken, salad, Asparagus

Thursday – Beef Stroganoff Casserole, Salad, Weekday Green Beans

Friday – Roasted Vegetable Pizza, salad

Saturday – Leftovers

Sunday – Keto Fried Fish, Buttered Asparagus, Jasmine Rice

Breakfast – Scrambled Eggs with Fresh Herbs

Lunch – Crockpot Pulled Chicken

Snack – Peanut butter and Keto crackers, cheese cubes

Shredded Chicken – Enchilada Casserole

Chicken Breast – Baked Parmesan Chicken

Tilapia – Deep Fried Fish

Tbone Steak – Steak dinner

Ground Beef – Beef Stroganoff Casserole

Whole Chicken – Crockpot Pulled Chicken

Onion – Enchilada Casserole, Beef Stroganoff Casserole, Weekday Green Beans, Roasted Vegetable Pizza, Crockpot Pulled Chicken

Red Pepper – Enchilada Casserole

Green Pepper – Enchilada Casserole, Roasted Vegetable Pizza

Sweet Potato – Roasted Vegetable Pizza

Red Onion – Roasted Vegetable Pizza

Kalamata Olives – Roasted Vegetable Pizza

Make Fathead Dough – Roasted Vegetable Pizza

Trim Asparagus – Buttered Asparagus

Scrambled Eggs with Fresh Herbs
