I am still trying to get back into the swing of meal-prepping after my April whirlwind. April was filled with out-of-town engagements and appointments. I need to get back on the bandwagon starting today!

Monday – BBQ Shrimp, Resistant Starch Mashed Potatoes

Tuesday – Went to my favorite restaurant for belated Mother’s Day

Wednesday – Pasta di Fagioli Soup

Thursday – Skillet Roasted Lemon Chicken, Broiled Zucchini with Herb Butter, Salad

Friday – Mexican Pizza, Salad

Saturday – Double Bacon Cheeseburgers with Egg and Smoked Mozzarella, Parmesan Zucchini Chips

Sunday Chicken Tikka Masala, Cauliflower rice and regular rice

Breakfast – Turkey sausage patties and eggs, Keto bagels

Lunch – Leftover soup and pizza

Snacks – Cheese and almond flour crackers, Yogurt with nut granola and blueberries

Shrimp – BBQ Shrimp (2 lbs)

Ground Beef – Mexican Pizza

Boneless Chicken Thighs – Chicken Tikka Masala

Pre-Made Mashed Potatoes – Side Dish

Italian Chicken Sausage – Pasta de Fagioli

Pre-Made Burger Patties – Double Cheeseburgers with Bacon and Fried Egg

Turkey Sausage Patties – Breakfast

Onion – Pasta di Fagioli, Mexican Pizza, Chicken Tikka Masala

Carrots – Pasta di Fagioli

Green Onion – Mexican Pizza

Cilantro – Chicken Tikka Masala, Mexican Pizza

Red Onions – Skillet Roasted Lemon Chicken

Zucchini – Roasted Zucchini with Herb Butter

Jalapeno – Mexican Pizza

Smoked Mozzarella – Double Bacon Cheeseburger with Egg and Smoked Mozzarella

Boil Pasta for Starch Resistance – Pasta di Fagioli

Make Fathead Dough – Mexican Pizza

Make Rice Starch Resistant – Serve with Chicken Tikka Masala

Make Herb Butter – Broiled Zucchini with Herb Butter

Prepare Seafood – Peel and soak shrimp in milk

Freeze Dry Leftovers

Shred Rotisserie Chicken

Shred Random Cheese

Vacuum Seal Dry Pasta in Jars
