Taco Mini Peppers

Stuffed with taco meat mixed with cheese, these Taco Mini Peppers are the perfect size for snacking or an appetizer. Top with your favorite toppings for a tasty bite of taco-ey goodness! Your family and guests will love them!

Ingredients

1 pound ground beef

Taco seasoning

1 cup salsa

1 cup cheese

1 bag of multi-colored mini peppers

Toppings:

Guacamole

Sour cream

Pickled jalapeno slices

Instructions

Brown the ground beef in a skillet. Drain.

Add the taco seasoning with 3/4 cup water. stir to combine. Cook until most of the liquid has evaporated and the mixture is thick. Add the salsa and stir to combine. Add the cheese and cook until melted. Turn off the heat and allow it to cool slightly to make it easier to handle while stuffing. You do not want to burn your fingers.

While the beef is cooling, cut off the tops of the peppers. Slice the peppers lengthwise in such a way that there is a cavity for stuffing. Place the peppers on a greased cookie sheet.

Spoon the meat mixtures into the cavities of the peppers. Now, you can top the peppers with some cheese; however, the cheese will melt off mostly onto the baking sheet. The meat already has some cheese in it, which minimizes the runoff, but is still just as cheesy. You can make a meal out of these, but my family prefers them as an appetizer or snack.
