This is what happens when my bestie comes to town for a visit, and we get together with our friends. Some serious snack food goes down! This snacky snack buffet was put together using items that I had on hand, except for the watermelon. Even observing some dietary restrictions, a scrumptious buffet can be made to suit everyone’s tastes. A gathering without a nice spread of food is not complete.
Starting at the bottom, I made a dip variety, including a southwestern dip made with mayonnaise and dairy-free sour cream, Wholly Guacamole from the grocery store, plain hummus and red pepper hummus, potato chips, blue corn and corn tortilla chips, almond crackers and Keto crackers, a small charcuterie tray, devilled eggs, two small veggie and cheese trays and a large bowl of watermelon.
Oh… Don’t forget about dessert! The brownies are made from a gluten-free mix. The other cookies were not gluten-free, but these were treats that my family did not eat on vacation, so I put them out. Even with dietary restrictions, we had plenty of snacks to eat.
Do you think there is too much food? Believe it or not, this was plenty for six people with only a little left over. The leftover veggies and cheese were used in a salad over the next week and the other items left over were easily consumed with snacking the next week. It had been a long time since we were together. We hung out in the pool and talked and laughed for hours. Good times!
