Blueberry Goat Cheese Balls

This recipe is adapted from a Pioneer Woman recipe that I found on her website. You can find the original recipe here. You could say I KETO-IZED it!!

Ingredients

1 block cream cheese, softened

2 small logs goat cheese (I used the Aldi goat cheese logs that are small)

1 cup chopped fresh blueberries

1 cup chopped pistachios, shelled

Instructions

In the bowl of an electric mixer, combine the cream cheese and goat cheese.

In a small bowl, combine the chopped pistachios and chopped fresh blueberries.

Form balls of the cream cheese/goat cheese mixture by about two tablespoons of the goat cheese mixture. Roll the balls in the blueberry and pistachios mixture until they are fully coated. Serve on a pretty platter or tiered tray with crackers. These are mini cheese balls. Everyone can have their own. I insert a plastic cocktail fork or spoon in the top of the goat cheese balls so each guest can use it for spreading on crackers. These look niche on the top tier of a tiered tray
