Chicken Fajita Unkebobs

What is an unkebob? An unkebob is something I invented because I do not have much use for a skewer. I have many recipes that I have made into unkebobs. Most skewered foods are grilled, but the beauty of an unkebob is that you can grill it, bake it or broil it. You could even put the unkebob ingredients in a grill pan to place directly on the grill.

Fajita Unkebobs have the flavors of fajita but are portioned on a larger scale. The ingredients are much chunkier, so I recommend serving on a bed of rice rather than inside a tortilla. Enjoy the freedom of the unkebob!

Ingredients

2 lbs. chicken breast, cut into chunks

For the Marinade:

1 lime, juice and zest

3 Tbsp. orange juice

3 Tbsp. olive oil

1 Tbsp. minced garlic

1 tsp. Swerve brown sugar (or regular brown sugar)

2 tsp. chili powder

2 tsp. cumin

1/2 tsp. garlic powder

1/2 tsp. Mexican oregano

1/4 tsp. crushed red pepper flakes

2 chipotle peppers in adobo sauce, chopped

1 tsp. salt

1/2 tsp. black pepper

For the fajitas:

2 red onions, cut into wedges

1 green bell pepper, cut into chunks

1 red bell pepper, cut into chunks

1 orange or yellow bell pepper, cut into chunks

2 jalapenos, seeded and cut into strips

Instructions

Place the chicken in a resealable storage bag. In a small bowl, whisk together the ingredients for the marinade. Pour the marinade into the bag with the chicken. I find it helpful to place the marinade bag into another resealable bag to prevent any leaks that can occur in the refrigerator. Place the bag in the refrigerator for 24 hours.

When you are ready to prepare the fajitas, spray a rectangle baking pan with cooking spray. Pour the contents of the chicken bag into the baking dish. Top with all the vegetables and sprinkle the vegetables with a good dose of salt and pepper. Using tongs, toss the vegetables with the chicken.

Bake on 350 degrees for 25 minutes, tossing the vegetables and chicken halfway through.

Serve the Fajita Unkebobs over rice with the sauce. Top with your favorite toppings, such as sour cream and salsa.

As a side dish, I served the Fajita Unkebobs with some Mexican Street-Style Cauliflower.
