Warm, comforting, and silky smooth, this Garlic Onion Bisque is everything you want in a cozy bowl of soup. The garlic flavor is surprisingly mellow, blending beautifully with leeks, onions, and fresh herbs for a rich yet balanced taste that’s perfect on a chilly night. Ingredients
1 large head garlic
1-1/2 Tbsp. extra virgin olive oil
4 Tbsp. butter
4 large sweet onions, sliced
2-1/2 cups leeks, sliced whites and light green only
1 tsp. salt
1 tsp. fresh rosemary
2 Tbsp. Carbquik or other low-carb baking mix
2 cups milk
1/3 cup dry white wine
6 cups chicken broth
1/2 cup sour cream
1/2 cup heavy cream
Fresh thyme and pepper for garnish
Instructions
Preheat the oven to 350 degrees. Slice off the top of the garlic to expose the garlic heads. Drizzle with olive oil. Wrap the garlic head in aluminum foil and place it on a baking sheet. Roast in the oven for one hour. Cool 10 minutes. Squeeze out the roasted garlic cloves into a bowl. Set aside.

In a skillet. Heat the olive oil and butter. Sauté the onion and leeks on medium heat for 20 minutes, stirring frequently.

Season with salt, rosemary and thyme. Cook another 30 minutes, stirring occasionally, until golden. Add a little water if the onion mixture seems dry.



Stir in the Carbquik. Cook about one minute. Stir in milk until slightly thick.

Add wine and broth. Stir until combined. Bring to a boil. Reduce the heat and simmer for 30 minutes.


Whisk in the sour cream. Add the garlic to the pan. Using an immersion blender, blend until smooth. Alternatively, you can pour the mixture into a blender and pulse until smooth.


Add the cream and stir until incorporated. Heat for about 10 minutes. Add homemade Keto croutons, a swirl of cream, black pepper or fresh herbs as a garnish.
