Curried Cauliflower

Curried Cauliflower is one of my go-to side dishes when I want something flavorful without a lot of effort. It’s quick and easy to prepare, and then it roasts in the oven while the rest of the meal comes together, which is always a win on busy nights.

I’ve served this roasted cauliflower alongside burgers, steak, pot roast, and roast chicken with great success. Even though the curry seasoning gives it a subtle Indian-inspired flair, this versatile side dish pairs beautifully with a wide variety of main courses.

1 head cauliflower, cut into florets

2-3 Tbsp. extra virgin olive oil

1-2 tsp. curry powder

1/2 or more cayenne pepper

3/4 tsp. salt

Spread the cauliflower florets on a baking sheet.

Drizzle with the olive oil.

Sprinkle the curry powder, cayenne and salt over the top.

Using your hands, toss the cauliflower until all florets are coated. You may add more seasonings to suit your own taste. You may need more or less, depending on the size of the cauliflower. Some cauliflower heads are huge and may need more seasoning, while others are tiny and require less.

Roast in the oven for at least 15 minutes at 400 degrees. The cauliflower should be fork-tender when done.
