Meal Prep for the Week of August 29

I have been out of town a lot during the summer. It’s fun to get away for awhile to regroup and refresh. Everyone needs it now and then. Coming back home with a fresh perspective is important for motivation and getting things done. Getting back into a routine seems satisfying after being away. For me, meal prepping is one of those tasks that I actually miss when I am away. I am ready to get back in the saddle.

The Menu

Monday – Quick Pan-fried Fish, Salad and Steamed Broccoli

Tuesday – Greek Pizza on a Cauliflower Crust

Wednesday – Greek Goddess Chicken Burgers, Resistant Starch Potato Salad

Thursday – Went out to eat

Friday – Chicken Broccoli and Potato Bake, Salad

Saturday – Went to Red Robin to eat before our movie marathon for National Cinema Day

Sunday – Tacos

Breakfast Keto Pumpkin Pancakes with Raspberry Maple Syrup, Fried Egg Grilled Cheese

Lunch – Chicken Pistachio Salad, Mexican Soup with Avocado and Lime, Leftovers

Snacks Charcuterie Board for Two, Keto Pretzel Balls with Beer Cheese Dip
