Salmon with Olive Salsa

Ingredients

4 salmon filets

Extra Virgin Olive oil

1-1/2 tsp. paprika

1-1/2 tsp. cumin

1 tsp. each salt and pepper

1/2 small red onion, chopped fine

2 Roma tomatoes, seeded and chopped

1/4 cup green olives, chopped

Juice of 1 lime

1 tsp. crushed red pepper

Instructions

In a bowl, combine the tomatoes, red onion, olives, lime juice and red pepper flakes. Set aside.

Combine the paprika, cumin, salt and pepper in a small bowl.

Drizzle fish with olive oil. Rub the fish with the spice mixture.

Preheat a grill pan sprayed with cooking spray. Place the salmon on the hot grill pan with the skin side down, and cook for 3 minutes on each side. Serve fish topped with olive salsa.
