Meal Prep for the Week of August 14

This was a week of experimenting. I made a lot of good things and tweaked them along the way I am disappointed with how the doughnuts turned out, but they tasted really good, so they will get another chance. Everything else was the bomb!

The Menu

Monday – Steak, Peppers and Onions Sheet Pan Dinner and Salad

Tuesday – Hearty Minestrone Soup, Vegetable Salad Stack

Wednesday – Scallops with a Creamy Onion and Mushroom Sauce, Lemon Parmesan Spaghetti Squash, Salad

Thursday – Chicken Cutlets with Savory Pecan Sauce, Roasted Green Beans with Lemony Whipped Ricotta, Salad

Friday – Keto Nashville Hot Cube Steaks, Fried Caeser Cauliflowerettes

Saturday – Popeye’s Chicken after a day of shopping and running errands

Sunday – Gumbo

Breakfast – Baked Keto Strawberry Doughnuts (these did not turn out very well, but deserve a second chance), Maple Gingerbread Smoothies (made in the Ninja Creami), Strawberry Smoothies (made in the Ninja Creami),

Lunch – Leftovers for lunch

Snack -Prosciutto Wrapped Asparagus, Indonesian Dip and Veggie Dippers, hummus with almond crackers, Gluten-free brownies from a mix, Watermelon Sangria (I had some girlfriends visit, so we had a wee party)
