I have to confess that this is not a post about meal prepping this week. It’s basically a meal plan.
1) I didn’t have much to meal prep, so I skipped that part.
2) Since my husband challenged me to go through my freezers and clear out some space, the first few weeks of menu items are meals that do not result in much prepping. Maybe that is good because meals were easy during this crazy Christmas time.
This weekend, my son graduates from college, so the next meal plan will also contain simple meals proven to be delicious by my family. All I needed to do was thaw and mix things. Here we go!

Monday – Hot Dogs
Tuesday – Vietnamese Pho in the Instant Pot
Wednesday – Golden BBQ Chicken Sandwiches Freezer Meal
Thursday – Bechamel Fish, Yellow Squash and Onions, Salad
Friday – Chicken Cakes with Creole Sauce, Steamed Broccoli, Green Beans
Saturday – Chicken Thighs with Artichokes and Feta, Cheese Topped Tomatoes, Salad
Sunday – Tacos and Taco Salad
Breakfast – Breakfast Burritos, French Omelet with Smoked Turkey, Keto Grits
Lunch – Pizza Crescents freezer meal, Hot Roast Beef Sandwiches, Turkey Provolone Pitas
Snack – Crawfish Dip, Gluten Free Vanilla Chex Mix
