Complement your main course with these Cheese-Topped Tomatoes are a very quick recipe with a big impact. Tomatoes make a wonderful side dish for a variety of entrees and will turn an ordinary tomato into a delightful addition to any meal.
Ingredients
4-6 Roma tomatoes
Salt and pepper to taste
1 small onion, grated
1 cup cheddar cheese
1/2 cup bread crumbs (I used Keto breadcrumbs)
2-3 Tbsp. butter, melted
Instructions
Slice a small piece of the tomato off the bottom and slice off the top stem so that it will have a flat side to stand up in a casserole dish or cut the tomato in half. Either way works
Place the tomatoes in a baking dish and sprinkle the tops with salt and pepper.
Spread some of the grated onion over the top of the tomato.
Divide the cheese between all the tomatoes and sprinkle with some breadcrumbs. Drizzle with some melted butter. Bake in the oven at 350 degrees for 20-25 minutes.
You want the tomatoes to become soft without losing their shape. Serve immediately.
