Having been out of town for a week, I tried to keep my menu simple until I could go to the store. For the last two weeks, we have had insane weather. The week after we returned from our trip, we immediately had to deal with two days of a hard freeze that included icy roads. Then, this week, we had rain almost every day. Not just light rain, but torrential downpours. Nobody likes to go to the store in that kind of weather. Keeping it simple worked.
