Meal Prep for the Week of January 29, 2024

Having been out of town for a week, I tried to keep my menu simple until I could go to the store. For the last two weeks, we have had insane weather. The week after we returned from our trip, we immediately had to deal with two days of a hard freeze that included icy roads. Then, this week, we had rain almost every day. Not just light rain, but torrential downpours. Nobody likes to go to the store in that kind of weather. Keeping it simple worked.

Monday – Copycat PF Chang’s Lettuce Wraps

Tuesday – Slow Cooker Beef and Mushroom Stew, Almond Biscuits and Salad

Wednesday – Chicken a la King over Almond Biscuits, Salad

Thursday – Hamburgers, Avocado Fries

Friday – Ordered Pizza

Saturday – Beef and Noodle Soup from the freezer, Almond Flour Biscuits

Sunday – Chicken Tikka Masala, Resistant Starch Rice

Breakfast – Greek Yogurt Parfaits with raspberries, blackberries and blueberries. Toppings included: Sugar-Free chocolate chips, chopped pecans, unsweetened coconut

Lunch – Leftovers, Bagels with Cream Cheese

Snacks – Nuts, Cheese sticks, Yogurt parfaits

Shredded Chicken – Chicken a la King

Sliced Chuck Roast -Slow Cooker Beef and Mushroom Stew

Ground chicken – Copycat PF Chang’s Lettuce Wraps

Ground Beef – Hamburgers

Chopping

Onions – Slow Cooker Beef and Mushroom Stew

Mushrooms – Slow Cooker Beef and Mushroom Stew

Carrots – Slow Cooker Beef and Mushroom Stew

Mushrooms – Chicken a la King

Green Onions – Chicken a la King, Copycat PF Chang’s Lettuce Wraps

Almond Biscuits – Chicken a la King and for Side Dishes

Hamburger Patties – Hamburgers

Greek Yogurt Parfaits

Freeze-dried Apples

Refilled: Sugar Free Chocolate Chips bin, table napkins,

Cleaned and defrosted kitchen refrigerator

Repackaged chicken breast
