This Keto Peanut Butter Pie is so rich and creamy that you will not believe it is low carb. If you like the flavor of peanut butter, this is the dessert for you! It is made with sugar-free peanut butter and keto-friendly whipped topping for a decadent dessert you will want to make repeatedly. You can chill it or freeze it for two different styles of delightful dessert eating.
Ingredients
1 cup creamy peanut butter
1 block cream cheese, softened
8-10 oz TruWhip Whipped Topping
2 Tbsp. heavy cream
1/3 cup powdered sugar
Sugar-free chocolate syrup for drizzling over the top
Peanuts, chopped
For the Crust (as an alternative to the following crust, you can use a pre-made chocolate nut crust):
2 boxes Simple Mills Chocolate Graham cookies, crushed
1 Tbsp. brown sugar Swerve
7 tsp. butter, melted
1 tsp. vanilla
Instructions
(If you are using a premade crust, you can skip this step) Place crust ingredients into a food processor. Process until incorporated. Press the mixture into a pie plate. I had a premade crust on hand, so that is what I used.
In the bowl of a mixer, add the peanut butter, heavy cream, cream cheese and powdered sugar. Mix until smooth.
Spoon the peanut butter mixture into the pie crust. Smooth the mixture evenly.
Top with the TruWhip Topping. Smooth over the surface of the peanut butter layer.
Decorate the top with the peanuts or a drizzle of chocolate syrup. If you are serving to guests, you can use a pretty pie plate for a nicer presentation. We often have this delicious pie as an anytime treat, so I used the convenience of having the aluminum pie plate to store it in.
