I’ll be honest—last year threw me entirely off my meal prep game. Life got hectic, routines fell apart, and meal prepping happened only in scattered, last-minute bursts. The start of this year has been chiefly about playing catch-up, sorting through the leftovers (pun intended!) of the chaos. But finally—finally—I think I see the light at the end of the tunnel. My kitchen rhythm is coming back, and I’m ready to dive into regular meal prep again. Let’s just say… I’m back, baby!

Monday – Leftovers

Tuesday Beef and Broccoli Stir Fry, Cauliflower Rice, Asian Salad

Wednesday – Cajun Spiced Salmon, Asparagus, Creamy Cucumber Salad

Thursday – Chicken Tortilla Soup, Salad

Friday Glazed Chicken Meatball Lettuce Wraps, Asparagus Tips, Asian Salad

Saturday – Leftovers

Sunday – Easter dinner with family

Breakfast – Bagels, Million Dollar Bacon

Lunch – Leftovers, Sandwiches

Snacks – Sugar Free Ice Cream made in the Ninja Creami, Yogurt with Strawberries and Nut Granola

Ground Chicken – Glazed Chicken Meatball Lettuce Wraps (3 lbs)

Shredded Chicken – Chicken Tortilla Soup

Bacon – Million Dollar Bacon

Salmon – Cajun Spiced Salmon

Sirloin Tip Steak – Beef and Broccoli Stir Fry

Green Onion – Glazed Chicken Meatball Lettuce Wraps (1/4 cup), Beef and Broccoli Stir Fry (2 Tbsp.), Creamy Cucumber Salad
