This fresh and crunchy salad pairs well with an entrée that has a little spiciness to it. The coolness of the salad balances the heat of the main dish.
Ingredients
1 English cucumber, chopped
1 green onion, chopped
1 large tomato, cut into chunks
1/4 cup plain Greek yogurt
3 Tbsp. sour cream
1 Tbsp. white vinegar
1/2 tsp. liquid Stevia
1/2 tsp. lemon juice
1/4 tsp. dried dill
1 tsp. of salt or to taste
2 pinches garlic powder
Instructions
In a medium bowl, combine the English cucumber, tomato and green onion. Stir to combine
Add the yogurt, sour cream, Stevia, lemon juice, dried dill, garlic powder and plenty of salt and pepper over the cucumbers and onions. Fold into the salad
Taste to adjust seasoning and serve with a garnish of fresh dill.
