Ingredients
1 keto yellow cake mix, baked and cut in cubes
2 cups strawberries, sliced
1 cup blackberries or raspberries
1 cup blueberries
1 lemon, juice and zest
3 Tbsp. honey
1 block cream cheese, room temperature
1 small pkg. vanilla Simple Pleasures instant pudding mix
1 cup milk, cold
1-3/4 cup powdered monk fruit or Swerve
1 tsp. vanilla
2 containers Keto TruWhip topping
Mint for garnish
Instructions
Make the cake according to the package directions. If you have a recipe for a Keto angel food cake, you can make that instead. An angel food cake would be just as lovely as a yellow cake in this recipe. Also, if you have leftover Keto cake from a previous treat, you can use it in this dessert.

In a bowl, combine the berries. Toss and set aside.

In another bowl, whisk the lemon juice, zest and honey.



Brush over the cake cubes.

In the bowl of a mixer, beat the cream cheese, pudding mix, milk, powdered monk fruit, and vanilla until fluffy, about 3 minutes.





Fold in one container of the TruWhip Topping.

In a trifle bowl, layer cake on the bottom, 1 cup of the berry mixture, then the cream mixture. Repeat the layers, finishing with the cream mixture. Garnish with whipped cream, more berries or fresh mint if desired. Chill until ready to serve.
